  • 1 pound ground beef
  • 1 pound ground pork
  • 2 large eggs
  • 1 cup dry bread crumbs
  • 3 tablespoons dried minced onion
  • 1-1/2 teaspoons salt, divided
  • 1 teaspoon pepper, divided
  • 2 cups cooked and cooled wild rice
  • 3 tablespoons butter
  • 3 tablespoons all-purpose flour
  • 2 cups beef broth
  • 1 can (14 ounces) whole-berry cranberry sauce

Directions

  1. Preheat oven to 425°. In a large bowl, combine ground beef, pork, eggs, bread crumbs, onion, 1 teaspoon of salt, 1/2 teaspoon pepper and cooked rice; mix lightly but thoroughly. Shape into 30 1-1/2-in. balls.
  2. Place meatballs on a greased rack in a 15x10x1-in. baking pan. Bake until browned, 15-20 minutes. Remove from oven and reduce temperature to 350°. Remove pan drippings into an oven-safe skillet.
  3. Add butter to skillet and melt over medium-high heat. Stir in flour and remaining salt and pepper until blended; cook and stir until lightly browned, 1-2 minutes (do not burn). Gradually whisk in broth. Bring to a boil, stirring constantly; cook and stir until thickened, 1-2 minutes. Add cranberry sauce, stirring until well combined. Add meatballs to skillet; stir to coat in sauce.
  4. Bake until cooked through, about 45 minutes, stirring halfway.

  1. In a large Dutch oven, cook beef over medium heat until no longer pink; drain. Continue to cook until beef is browned, 4-5 minutes longer. Add onion and celery; cook until tender. Stir in chili powder, cumin and pepper; cook 1 minute. Add green chiles and garlic; cook 1 minute longer.
  2. Stir in juices and tomatoes. Bring to a boil. Reduce heat; simmer, uncovered, for 20 minutes. Add beans and simmer 20 minutes longer or until thickened to desired consistency. If desired, serve with sour cream, avocado, cheese and jalapenos.
  3. Freeze option: Freeze cooled chili in freezer containers. To use, partially thaw in refrigerator overnight. Heat through in a saucepan, stirring occasionally; add water if necessary.

You might know this dish by other names, like cowboy casserole or tamale pie. It’s an easy casserole made with a layers of seasoned ground beef, pinto beans and diced tomatoes, all baked under a blanket of cornbread batter.

One of the best things about this dish, besides the fact that everyone will love it, is that you can add your own twists. Fold in more veggies like corn or bell peppers, make it spicy with cumin and cayenne or try it with ground turkey.   • 1 small onion, diced
  • A pinch of salt

  • 1 (15-ounce) can Ranch-style beans, drained (see note below)
  • 1 (14.5-ounce) can diced tomatoes or Ro-Tel diced tomatoes with chiles
  • 2 teaspoons Worcestershire sauce
  • 1-1/2 teaspoons chili powder
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 2/3 cup shredded cheddar or Mexican blend cheese

For the cornbread:

  • 1/2 cup all-purpose flour
  • 1/2 cup cornmeal
  • 2 tablespoons sugar
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1 large egg, beaten
  • 1/2 cup buttermilk or 2% milk
  • 1 tablespoon vegetable oil
  • 1/4 cup diced jalapenos or diced green chiles (optional)

Editor’s Note: Ranch-style beans are pinto beans in a seasoned tomato sauce. If your store doesn’t have these, you can substitute canned pinto beans.

Directions

Step 1: Cook beef and onions

Preheat the oven to 425F. Spray an 11×7-inch or 8-inch square baking dish with nonstick spray.

Heat a large skillet over medium heat; crumble the ground beef and add the diced onions. Sprinkle a pinch of salt and black pepper into the pan. Cook, stirring occasionally until the beef is browned. Pour off any excess grease.

Step 2: Simmer the mixture

Add to the pan the beans, diced tomatoes, Worcestershire sauce, chili powder, garlic powder and onion powder; stir everything together.   • 1 large sweet onion, finely chopped

  • 1 tablespoon butter, melted
  • 2 teaspoons minced fresh mint

  • 1 pound ground beef
  • 1 jar (16 ounces) grape leaves, rinsed and drained
  • AVGOLEMONO SAUCE:
  • 2 cups beef broth
  • 2 medium lemons
  • 3 large eggs, beaten
  • Dash kosher salt

Directions

  1. In a large bowl, mix the first 11 ingredients; crumble beef over top and mix lightly but thoroughly. Pat grape leaves dry with paper towels.
  2. Line bottom of a Dutch oven with 8 grape leaves. Place about 1 tablespoon beef mixture on each remaining grape leaf, shiny side down. Fold in long sides over filling; roll up. Repeat. Arrange dolmades seam side down over grape leaves in Dutch oven. Place a heavy plate over dolmades. Add enough water just to cover plate. Bring to a boil; reduce heat. Cook, covered, until rice is tender, 45-50 minutes.
  3. Meanwhile, for avgolemono sauce, in a small saucepan, bring broth to a boil. Reduce heat to a simmer. Finely grate zest from lemons. Cut lemons crosswise in half; squeeze juice from lemons. Transfer zest and juice to a small bowl. Whisk in eggs, salt and pepper until blended. Gradually whisk egg mixture into broth. Cook and stir over low heat until slightly thickened, 4-5 minutes (do not boil). Remove plate from Dutch oven; remove dolmades with tongs, draining excess liquid. Serve with sauce.

Not gonna lie: When I see someone rinse ground beef in the sink, I gag a little. Though I’ve seen a few people commit this kitchen heresy in private, the first time I saw someone publicly rinsing beef under the sinkand calling it a “hack”was in this TikTok video a couple of years ago. TikTok user Emily Harper purports to show a trick she learned in nutrition class, noting in the video, “All this grease is disgusting. So get rid of it!” She then puts her cooked ground beef in a strainer and runs it under the sink faucet, washing away the grease and putting the dry meat back in the pan.

Unsurprisingly, the internet lost its mind in outrage and it went viral for all the wrong reasons. “That video of someone rinsing their ground beef is going to ruin my week,” tweeted one person. “Who rinses off ground meat!” exclaimed another TikToker in a duet. There were so many negative comments on the video that Harper had to turn them off.

Should You Rinse Ground Beef?

The short answer is no. First of all, that “grease” is rendered fat, which is what gives the delicious flavor to your ground beef. While it’s fine to get rid of some excess grease, you always want to keep some of it in the pan. If you rinse away all the grease, you’re literally rinsing away flavor, and your beef will end up dry. Find out if draining and rinsing meat reduces the fat content.

Secondly, pouring that grease down the sink is terrible for your pipes. Yes, the grease is in a liquid form when you pour it from the pan, but as soon as it cools, it’s going to gum up and potentially block your pipes. The fats from grease bond together with other discarded fats and chemicals to create blockages. These can cause serious problems in the sewer system and lead to backups in your neighborhood. Even a teaspoon of grease down the drain now and then can add up. You should alwaysdispose of greaseandcooking oil the right way (for instance, by letting it cool in a container first and then tossing the container) without putting it down the sink. Find out if you should wash your food before cooking.

How to Drain Grease from Ground Beef

First of all, don’t deal with hot greasewait until it cools. Next, you need to pour it into a disposable container, such as a yogurt or sour cream container or an old can. You can also use a plastic bag that has some debris such as used paper towels or vegetable peels that can help soak it up. Another option is to install a disposable grease trap in your sink drain. Finally, you can always save meat or bacon grease to use for cooking later, like grandma did.

Ground beef is a fantastic ingredient to have around. It can be used to make hundreds of different recipes from varying cuisines, so it’s versatile enough to satisfy foodies and picky eaters alike.

However, cooks need to be careful because ground beef is highly perishable. Grinding the meat exposes it to oxygen, causing it to go bad more quickly than a whole-muscle steak.

Wondering how to tell if ground beef is bad before you use it for your favorite ground beef recipe? Follow these three steps.

3 Ways to Tell If Your Ground Beef Is Bad

Check the Color

Surprisingly enough, the color of ground beef isn’t enough to raise the alarm. Meat is full of a pigment called myoglobin, which is responsible for delivering iron and oxygen to muscles. When this pigment is exposed to air, it turns bright red. Because it looks so nice, most butchers use a special plastic wrap that allows some oxygen to get through, giving the top layer of your ground beef a bright, red color.

The only problem? All that ground beef underneath the top layer has no access to oxygen, so it turns an unappealing color of gray. This will also happen to any beef you store in the freezer. It’s perfectly safe to eat, although you should be aware that the color indicates it has been previously frozen or it’s sat in the package for a while. (Learn whether freezer-burned food is safe to eat.)

That said, if the top layer of beef has turned gray or brown (and it was never frozen), it’s time to throw the package out. You’ll also want to be on the lookout for other colors, like white or blue, which could indicate mold has started to grow.

Smell It

Fresh ground beef should smell neutral, with a light iron aroma. It will take on a slight odor if it’s been in the package for a while and is close to reaching its expiration date. But, if the smell is strong enough to make you wrinkle your nose, you know it’s time to toss it. Be on the lookout for ground beef that smells rotten or sour. When in doubt, it’s best to throw it out. An off aroma is a sign of spoilage, especially if you see other signs in the color and texture.

Notice the Texture

The biggest risk factor when it comes to ground beef is Salmonella and E. coli. These bacteria don’t affect the color of ground beef (nor the smell), so it’s important to perform a touch test if the beef is in question. Fresh ground beef is firm and springs back easily if you poke it. Squeezing the beef between your fingers (I know, gross, right?) will cause the meat to crumble. If it’s gone bad, the beef will be slimy and sticky, and it won’t crumble as easily.

What Happens When You Eat Bad Ground Beef

Eating bad ground beef is not fun. If the beef is not handled properly, or it’s too old, pathogenic bacteria can grow and lead to some unpleasant food poisoning symptoms.

Signs of foodborne illness from bad ground beef include stomach cramps or pain, vomiting, diarrhea, chills and/or fever. Symptoms can occur anywhere from one hour to 72 hours from consumption and generally last less than a week.

It’s not fun, and foodborne illness can be dangerous for the very young or old or those with compromised immune systems. So, when in doubt, throw it out!

How to Handle Ground Beef

Proper handling and storage of ground beef is the best way to prevent it from going bad. Start by inspecting the package at the store. It should feel cold to the touch without any holes or scratches in the wrapping, and the meat should be red. Be sure to peek at the expiration date, too.

Head straight home and get the ground beef into the refrigerator as soon as possible. To prevent cross-contamination, store ground beef wrapped in a bag on the bottom shelf in case any of the juices leak from the package. Be sure to use or freeze the ground beef by the expiration date. Defrosted ground beef is good in the fridge for up to two days if it was thawed in the refrigerator, but you’ll want to cook it immediately if you used the microwave or thawed it in cold water.

The USDA recommends cooking ground beef to an internal temperature of 160F before serving it. Serve cooked ground beef immediately or refrigerate it within two hours of cooking.   1. Preheat oven to 400°. In a large skillet, cook beef and onion over medium heat until beef is no longer pink and onion is tender, 6-8 minutes, breaking up beef into crumbles; do not drain. Stir in hard-boiled eggs, olives and seasonings; heat through. Remove from the heat.
  2. Brush beaten egg over edges of dough circles. Place 3 tablespoons filling on 1 side of each. Fold dough over filling. Crimp edges and press to seal. Place on parchment-lined baking sheets. Brush tops with remaining beaten egg. Refrigerate for 15 minutes.
  3. Bake until golden brown, 20-25 minutes; serve warm with salsa verde if desired.
